From my own bottles...

Cuir d'Ange
Ombre Leather
Cuir d'Iris
Fahrenheit
Polo
Dzing!

I enjoy Tuscan Leather too but haven't sprung for a bottle. Maybe a 10mL decant eventually.

Of the few ones I tried, I rate these high:

Guerlain Derby
Leonard Pour Homme
Patou Pour Homme
Acier Aluminium (I smell fresh leather note in this, though it doesn't appear in its notes list)
Or Black

I don't think I can list 5, but my favorite is Chanel Cuir de Russie, as well as a perfume that moves me like no other, just perfection. Your question made me realize how underrepresented the genre is in my collection, even though I'm a fan I haven't smelled very many either.
I remember enjoying Cuir Beluga, Cuir d'Ange and currently Dior Homme Parfum.
I'd like to smell Eau Sauvage Cuir flanker and Knize Ten sometime.

I was also curious about ES Fraicheur Cuir but never got to try it. It's quite poorly reviewed, so don't think have missed much. K10 is interesting but not a favourite of mine. I find that the gasoline accord dies down too quickly and the base leaves me feeling unfulfilled. I prefer the Golden Edition which is more floral.

I don't care much for Chanel's Cuir de Russie, even though I love the accord.

I personally find them quite different. Ombre is quite casual and Tuscan a lot more formal.

Yes, but being an Eau Sauvage fan I'd like to. I regret passing on a cheap bottle a few years ago

I like leathers. When the winter comes, they'll be back in rotation. I own many-and having to choose 5 I'd go for:
Rien
Bandit
Leather oud
Knize Ten
Chanel Cuir de Russie

Leather fragrances never smell like leather to me

A bunch don't smell much like leather to me. Chanel Cuir de Russie and Tom Ford Tuscan Leather - which have leather in the name - do smell like leather to me, and some others to varying degrees. But some of my favorite perfumes with leather listed as a note do not smell like leather to me:

1. Givenchy Gentleman
2. Chanel Antaeus
3. Hermes Bel Ami
4. Moschino Pour Homme
5. Dior Fahrenheit

No definitive top 5 though these are in the top area :)

1. Moschino PH
2. Bogart Signature
3. Worth PH Aftershave (similar leather to Moschino though a lot more dirty funk)
4. Bel Ami

Edit: Worth PH in old form. Mega warning if you wanted to pick up a new one. No hyperbole- cat wee, wet dog. Lol what's more don't be duped by listings with new bottles claiming rare. Seems to have been a real dip in availability. The 5$ bottles are now optimistically going for at least 5 times that. Chancey!

In no particular order

Etro Gomma/Knize Knize Ten (IBQ leather+aromatics/florals)
Hermes Bel Ami (another classic leather accord)
Hiram Green Hyde/Papillon Anubis/Tauer Lonestar Memories (smoky leathers)
Bottega Veneta Bottega Veneta EdP (suede)
Gucci Gucci Guilty Absolute (leather, woods, patchouli)

I tend to like smooth supple leathers, I've tried so many smokey bitter leathers I hated. But hermes does it right:
Hermes Cuir d'Ange
Hermes Agar Ebene
Hermes Galop

And I like floral leathers: Cuir de Russie, and Osmanthe Yunan (for the most subtle whiff of leather)
